My take on a classic pairing of fois gras, fig and Sauternes. I wasn’t satisfied with my previous cocktail version, so here’s v2.0: – Sauternes Sabayon made with dehydrated Sauternes crystals, Sauternes wine and Duck Egg Yolk – Toasted Duck Egg White, Fig and Fois Gras Powder – Topped with Fresh Figs and Rosemary – This version deconstructs duck and Sauternes in all forms. Adding the duck yolk with Sauternes sugar creates a incredibly rich and decadent sabayon. – The duck egg whites are light and airy, with an intense infusion of fig and fois gras. –
